All time favorite Shrimp and Rice Casserole from Mrs. Henrietta McClellan who lives in McClellanville, South Carolina.. McClellanville is a small shrimping Village between Charleston, SC and Georgetown, SC. Mrs. McClellan has a son and grandson who are still shrimping.
Shrimp and Rice Casserole
| 2 c. rice cooked |
1 can cream of mushroom soup |
| 2 c. shrimp (peeled and slightly cooked) |
1/2 soup can milk |
| 1 sm. onion-chopped or minced |
Cheese, grated to cover |
| 1 sm. bell pepper-chopped or minced |
(if desired also mix in casserole) |
Mix all ingredients together, except paprika. Put in buttered baking dish. Cover with cheeses and sprinkle with paprika. Bake in moderate oven until cheese melts and is bubbly and lightly browned.
