Shrimp season:  Starting in May large white roe shrimp are available.  This is can be a very short season(1-3 weeks).  Around the middle of June the smaller but delicious brown shrimp begin.  These shrimp grow in size as the summer progresses.  Toward the middle of August, the brownies start to disappear.  From the end of August to the 1st of September the white shrimp start to appear in the small to medium size and continue to grow throughout the fall. Shrimp season can end anytime from the middle of December or the 1st.  part of January.  

 

Boiling shrimp: Barely cover with water(with spices if desired). 
Small shrimp approximately 1min.

Medium shrimp-approx. 2min

Large shrimp-approx. 3min, or what you know works best for you.

 

Sauce: My Aunt Jo made the best and the simplest-mix horseradish (found in the refrigerator section of the grocery store) and ketchup.  Add a small amount of horesradish to the ketchup until you get the desired flavor.

All you have to do now is to enjoy South Carolina Ocean caught shrimp!!!   If you do have More than you can eat now and want to have shrimp for later, Freeze them.        

 
Freezing shrimp
  1.  Rinse                                                                
 
2.  Gently place into a zip-lock bag
 
3.  With bag in sink, fill with water
 
4.  Zip bag letting some water come out as the bag
      is sealed
(purpose is to remove all air)
 
5.  Gently place in pan and put in freezer until frozen
    
(this prevents leaks in freezer)
 
6.  After frozen, store in freezer however you like

Shrimp will be good for months, but don’t wait months.  Eat ‘Em up!
